Slow cooker recipes are my favorite! I love that I can assemble the recipe in the morning, turn on the slow cooker and let it do the rest! Come dinner time the house smells wonderful and the food is ready to be served! I love this creamy chicken recipe because it only call for 4 ingredients! Add some rice or noodles and you’ve got a yummy main dish!

Creamy Slow Cooker Chicken

Yield: 6 servings

Ingredients

  • 1 envelope dry onion soup mix
  • 2 cups sour cream
  • 10 3/4 oz. can Cream of Mushroom soup
  • 6 boneless, skinless chicken breast halves (I like Zaycon chicken!)
  • ground black pepper to taste

Instructions

1. Combine soup mix, sour cream, and cream of mushroom soup in slow cooker. Add chicken. Make sure you push it all down so it is completely submerged in the sauce.

2. Cover. Cook on Low 8 hours. Depending on your slow cooker, you may need to adjust this slightly so be sure to check on it around hour 7.

3. Serve hot over noodles or rice. Season with ground black pepper if desired.

7 Fast and Easy Freezer Meals Using Chicken

I ordered a 40 lb case of chicken from Zaycon Foods and it is coming this week!

I usually package my chicken in freezer bags like you see in our youtube video below. But with so many freezer meal recipes on Fabulessly Frugal and my dire need for time saving meals in my freezer, this time I am going to take the time to prep some freezer meals with my Chicken!

My Chicken Freezer meal recipes of choice:

A 40 lb box of chicken should contain about 80 breasts of chicken so I have a lot of meat to work with for my recipes. I am going to double each one of my recipes.  Once you put the effort into making one you may as well make two. You can use these ingredients to make your own grocery shopping list. Don’t forget to see what you have in your pantry from couponing!

BBQ Chicken Pizza  <—-Link to the full recipe

1 pizza crust (store bought or homemade)
2 c. mozzarella cheese
½ Red onion
2 Chicken breasts cut into small slices or shredded
2-3 c. BBQ Sauce
Cilantro

4 Boneless, skinless chicken breasts
1/2 Can Bread crumbs
6 Eggs
2 c. Shredded mozzarella cheese
Prego sauce

4 chicken breasts

Juice from 2 limes
1 cup or 1 bunch fresh cilantro, chopped
1 (16 oz) bag frozen corn
2 garlic cloves, minced
1/2 red onion, chopped
1 can black beans, drained and rinsed
1 tsp cumin
salt and pepper to taste

What I need to know to make 14 freezer meals:

My Shopping list: I have most of the ingredients on hand to make these meals, but I will need a few things from the store. Your shopping list may have a few more items depending on how much couponing and stockpiling you have been doing.  I have doubled the ingredients to make two of each meal.

Creamy Chicken, Pasta & Veggie Skillet Recipe

Ingredients

  • 1 pound boneless, skinless chicken breast, cut into bite sized pieces
  • 1 (14.5 oz) can petite diced tomatoes, undrained
  • 1 medium onion, chopped
  • 8 oz. dry Penne, Rotini, or Rigatoni Pasta (I like Ronzoni Garden Delight Rotini)
  • 1 cup frozen green peas, unthawed
  • 1 (10 3/4 oz) can Cream of Mushroom Soup
  • Grated Parmesan cheese as topping (optional)

Instructions

1. Cook pasta according to box instructions. Meanwhile, cook the onions and chicken in a non-stick skillet over med-high heat for 5 minutes or until there is no more pink in the centers.

2. Stir in the un-drained tomatoes and soup. Cook for 5 minutes or until heated all the way through. Stir occasionally. Add in the peas and mix well.

3. Drain the pasta and place in a large serving bowl. Add tomato mixture and toss to thoroughly coat. Top with Parmesan cheese.

Serve warm.

Freezer Meal Recipe: Cilantro Lime Chicken {Slow Cooker}

I’ve seen this recipe floating around Pinterest and decided it was worth a try. The question is, would I make it again?

Yes!  This is a simple, but flavorful meal to have on hand in the freezer. Just thaw and throw it in the slow cooker! I served this Cilantro Lime Chicken with tortillas and toppings like cheese, sour cream and salsa. I imagine it would be great served with some Mexican or Spanish Rice too.

Freezer Meal Recipe: Cilantro Lime Chicken {Slow Cooker}

Serves 5-6

Ingredients

Instructions

Place all ingredients in a resealable gallon-sized freezer bag. Seal bag and shake to mix ingredients together. Lay flat to freeze.

To Prepare from Frozen: Remove from freezer and thaw in fridge for 24 hours. Cook on low for 8 hours (or high for 4 hours).

If desired, shred chicken right in the slow cooker at about 30 minutes before cooking time is complete.

Freezer Meal Recipes: Chicken and Okra Gumbo

I love fresh homemade Gumbo! This is a recipe my husband got when he spent time in Louisiana & it’s so authentic. The recipe is doubled so you can have some tonight for dinner & freeze the other half for another night.

Freezer Meal Recipes: Chicken & Okra Gumbo

Ingredients

  • 3 lbs chicken breast (can use whole chicken then de-bone but I prefer all white meat)
  • 5 cups cut okra (fresh or frozen)
  • 2 medium onions, chopped
  • 2 bell peppers, chopped
  • 2 (15.5 oz) cans of tomatoes
  • 1/4 cup oil
  • 3/4 cup flour
  • 1/2 cup butter
  • 2 garlic cloves minced
  • 1 Tbsp Creole seasoning (add more to taste, depending on how spicy you like it)
  • 6 cups cooked rice

Instructions

Cut chicken into pieces and boil in about 1 1/2 gallons of water. Remove and de-bone.

In a big skillet cook okra, onions, bell pepper, garlic and tomatoes in oil slowly on medium for about 30 minutes or until the okra is not slimy.

Start your rice cooking using package directions.

Make a roux, in a small sauce pan melt butter.

Remove from heat then mix in flour until clumps are gone.

Add roux, vegetables and chicken to hot chicken broth.

Add Creole seasoning and simmer for about 2 hours.

Serve over rice.

Serves 12.

Eat half tonight then put half of the gumbo in an air tight container to freeze for later.

The rice does not freeze well so only freeze gumbo.

Make 6 cups of fresh rice while you reheat from your freezer.

Crock Pot Chicken Ole

crock pot recipe chicken ole This recipe was posted on our site as a freezer meal recipe HERE. I originally found it in a old cookbook passed down from my mom. I modified it and we’ve been cooking it (and loving it) for years. I realize it looks like a big pile of mush, but it tastes so good it’s forgiven for being ugly! I’ll post the recipe with my little tips for how I make it in pink:

Crock Pot Chicken Ole

2 cans of Cream of Chicken soup Cream of Chicken soup coupons (you can also use 1 can of C of C and 1 can of Cream of Mushroom if preferred, tastes great both ways)
1 7 oz can green Chile salsa (I will occasionally add 1.5-2 cans if I want it to have more of a kick)
1 cup sour cream
2 Tbs grated onion (I never measure the onions I put in, so it usually ends up being a bit more than this)
4 cups boiled, Zaycon shredded chicken (I shred my chicken with a hand mixer. It is the simplest way I’ve found to shred chicken!)
12 corn tortillas cut into 6 strips each (use large tortillas and cut with kitchen scissors)
1 1/2 cups cheddar cheese cheese coupons (again I don’t measure, so I probably end up adding a bit more than the recipe calls for)

Combine 1st 5 ingredients and set aside.

Lightly grease crock pot. Arrange alternating layers of tortillas and chicken mixture, finishing w/ chicken mixture on top (do not leave any of the tortilla pieces exposed because they dry out).

Cover and cook on low 5 hours. Sprinkle w/ cheese and cook for 10 more minutes (I will sometimes add sliced black olives on top at this stage with the cheese).

We serve this with black beans, homemade salsa, rice or salad for a full meal!

Crock Pot Freezer Meals : { Pineapple Pepper Chicken }

Do you have all of these ingredients in your pantry to make this delicious Make Ahead Crock Pot Meal? Pineapple Pepper Chicken is one of our families favorites and I always like to make enough to freeze any time I make it for dinner. We have had this recipe in our in our Freezer Meals series for a few years. Since I do not always have time for group freezer meal cooking I thought I would show you how I like to make dinner for now and dinner for later with barely any effort.

Here are the ingredients you will need:

Imagine that there is ketchup in that photo. I made this with out ketchup because I was forgetful, but it actually still turned out fab so if you decide to forget the ketchup like I did you will still have a fab meal!

You will need: 

2 cups unsweetened pineapple juice
1 cup sugar sugar coupons
1 cup vinegar
3/4 cup water
1/2 cup packed brown sugar sugar coupons
1/3 cup cornstarch
1/4 cup ketchup
3 Tbls soy sauce
1 tsp. chicken bouillon granules
1/2 tsp. ground ginger
6 chicken breasts {Zaycon chicken is my favorite}
1 can (8 oz.) pineapple chunks, drained  Pineapple Coupons
1 medium green pepper or half red and half green for more color and flavor
1 medium onion chopped {optional}

Get conversions to make Pineapple Pepper Chicken for 6 families!

To Prepare:

Combine the first 10 ingredients, then add chicken. Place in crock pot. Cook on low for 5-6 hours. Set aside pineapple onion and pepper. 30 minutes before you’re ready to serve add pineapple onion and peppers, cook an additional 30 minutes. Serve over rice.

If you remember to use ketchup your sauce will have a deeper red color. You will serve half of this meal tonight and save the other half for later in your freezer. Zaycon Chicken breasts are quite large and I can easily feed my family of four with only 3 breasts and still have a little left over for lunch the next day. I will save the remaining sauce and other three breasts for my freezer. You can cook with a few more chicken breasts if you need to for your family size. The sauce measurements can all stay the same.

Freezer Cooking for a group tip: 
Place freezer bags in a large bowl so you can fill more than one at a time and keep them from spilling.

This night I served over brown rice. This crock pot chicken is great on white or brown rice. It is personal preference. I alternate with my family. They like the taste of white rice better, but brown rice is healthier.

Eat half for dinner tonight. Bag the remaining chicken and sauce in a 1 gallon freezer bag.

To Prepare after freezing: Thaw ingredients enough to place chicken in a 13x 9 pan. Place pan in oven at 350° and bake for 30-40 minutes.

Crock Pot Whole Chicken

Ingredients:

4 tsp salt
2 tsp paprika
1 tsp cayenne pepper
1 tsp onion powder
1 tsp thyme
1 tsp white pepper
1/2 tsp garlic powder
1/2 tsp black pepper
1 cup chopped onion

Directions:

  1. In a small bowl, combine the spices.
  2. Remove any giblets from chicken and clean chicken.
  3. Rub spice mixture onto the chicken.
  4. Place in resealable plastic bag and refrigerate overnight. (I usually skip this step because I’m always in a hurry).
  5. When ready to cook, put chopped onion in bottom of crock pot.
  6. Add chicken. No liquid is needed, the chicken will make it’s own juices.
  7. Cook on low 4-8 hours

Fabuless Freezer Cooking: Breaded, Smothered Chicken

Breaded Smothered Chicken

For 1 Family

4 Boneless, skinless chicken breasts (thawed)
1/2 Can Bread crumbs
6 Eggs
2 c. Shredded mozzarella cheese

Sauce
1 15 oz. can Tomato Sauce
A Few Pinches of Basil
A Few Pinches of Garlic
Or use your favorite Ragu or Prego

For 6 Families

24 Boneless, skinless chicken breasts (thawed)
3 Cans Bread crumbs
36 Eggs
12 c. Shredded mozzarella cheese

Sauce
6 15 oz. can Tomato Sauce
A Few Pinches of Basil per person
A Few Pinches of Garlic per person
Or use your favorite Ragu or Prego

To Freeze

Dip thawed, raw chicken in a bowl containing whipped eggs. Then dip the chicken into a separate bowl containing bread crumbs.  Place covered chicken in a freezer bag to store.

To Prepare

Thaw chicken.  Bake on 375 until almost done (about 10 min. remaining).

While Chicken Cooks, Prepare Sauce: mix tomato sauce with basil and garlic (just a few shakes from each spice). Or use your favorite Ragu or Prego sauce. Warm on low heat.

Remove chicken from oven with about 10 min. left to cook and smother with tomato sauce. Add shredded mozzarella on top. Return the chicken to the oven and let it finish cooking. Remove and enjoy!
