BBQ RANCH CHICKEN SALAD

I had a BBQ Chicken salad similar to this at The Cheesecake Factory. I decided to make my own southwestern version and my family loved it! So this is my Cheesecake Factory BBQ Chicken Salad copycat recipe.

You can make this salad with crispy chicken or grilled chicken breast strips. It is up to you. The crispy chicken gives the salad a crispy kick. The Cheesecake Factory version has crispy onion rings to give you the crispy kick. Another great way to prepare your chicken for this salad is to use the Cilantro Lime Chicken recipe. This recipe gives the chicken such a nice flavor and enhances the chicken salad even more.

You will need the following ingredients to make this BBQ Ranch Chicken Salad; corn, black beans, cheese, olives, avocado, cilantro, chicken, ranch and BBQ sauce.

BBQ Ranch Chicken Salad

Ingredients

  • 8 Crispy Chicken tenders
  • OR
  • 4 Grilled Chicken Breasts
  • 1 can of corn
  • 1 can of black beans
  • 3/4 cup shredded cheese
  • half can of olives sliced
  • 1/4 cup chopped cilantro
  • 1 sliced avocado
  • 2 heads of Romaine Lettuce {or your favorite lettuce}
  • BBQ Sauce {Sweet Baby Rays is my favorite}
  • Ranch Dressing {Make my Creamy Cilantro Ranch} It is to yummy!

Instructions

  1. Cook chicken. Make dressing. Shred lettuce. Place lettuce on plate and layer with all of your favorite ingredients above corn, beans, cheese, olives, avocado, cilantro, and chicken. Drizzle ranch and BBQ sauce on top of salad. Enjoy!

  1. This is one of our families all time favorite meals. Yummy! I add fried onions (just a touch/a little goes a long way) & sliced avacado. Suddenly I’m hungry :)

  2. This is one of my favorite salads. Add some red onion and the blue tortilla chips to it and it becomes addicting.
