Good-Till-the-Last-Bite Strawberry Pie

Ever have one of those pies you just LOVE?! Well, this is my husband’s FAVORITE pie. It’s so simple, virtually sugar free, yet tasty enough that he can eat an entire pie in one sitting. No joke! It’s what we’re making for Valentine’s Day dessert…it’s turned into a fun tradition we all enjoy! I make it for him every year, and also sometimes on the 4th of July too when we get together for a family pie sampling picnic!

Ingredients

  • Frozen Pie Crust
  • 1 16 oz bag frozen strawberries or go with fresh
  • 1 large box strawberry or raspberry Jell-O we use sugar free
  • â…” cup boiling water

Instructions

  • Bake frozen pie crust.
  • While crust is baking, microwave frozen bag of strawberries until mashable, mash to desired chunky consistency & set aside (For a sweeter pie, you can add sugar to the strawberries at this stage.)
  • Dissolve Jell-O into 2/3 cup boiling water (or strawberry juice).
  • Mix Jell-O/water w/ crushed strawberries & pour into now-baked pie shell.
  • Refrigerate until solid, about 4 hours.
  • Serve w/ whipped cream.

  • Sounds and looks delish! I’m def going to try this soon. One question though, my family is hyper-sensitive to dyes, especially Red 40. What else can I use besides flavored red jello?

    • Use plain gelatin & then replace the boiling water with boiling fruit juice to add flavor. That might change it a bit, but you should still end up with a delicious pie!

  • Could this be made with blueberries and blueberry Jello? Have you tried other berries and if so, how has it turned out? This looks so yummy, can’t wait to try this recipe and maybe blueberry too!

  • Unfortunately I did not know the size of a package of frozen strawberries. I used part of a package from Costco. I guess I had too many strawberries because the small box of strawberry jello did not set. It would help, in the future, to designate an amount of strawberries. I’m sure this is a wonderful recipe if the strawberry mixture sets.

  • I make this all of the time, mostly by eye.I keep a 1lb bag of frozen strawberries on hand. Standard pie crust use the whole bag ,smaller size graham cracker crust use 1/2 or until bottom is covered.Foor the lg pie I use the lg box of jello to pour over strawberries there is usually some left .A small box of jello for the smaller pie.I do dissolve the jello as stated on the box to dissolve Then add some ice cubes and 1/3 to 1/2 the water let it thicken some and pour over berries till it looks fairly well covered.(as stated use -rebaked crust or a graham cracker crust.
    When there is extra jello my inner child has to add some sliced banana and a few sliced berries let it set.Then my husband and I have an extra treat.
