So this week my plan was simple: DON’T SPEND A DIME AT THE GROCERY STORE! My husband overspent a bit (read: A LOT!) when I sent him to the store for me, so I needed to plan a menu this week around 100% of what we had on hand. Our freezer is full of meat, I have FREE milk coupons from last week, I have plenty of ingredients to bake bread and I have a bunch of fruits and veggies left over. Here’s what I came up with:
Dinner Meal Plan
Wednesday: Tortilla-Crusted Chicken, black beans and salsa (ended up not making this last week, so I have everything I need on hand!)
Freezer: Zaycon chicken
Fridge: Eggs
Pantry: Chips, salsa, black beans
Thursday: Pizza fundraiser at my daughters’ school (this happens once a month now, so this has become our monthly pizza night!).
Friday: BLTs and fruit salad
Freezer: Zaycon bacon, strawberries, raspberries, blueberries for fruit salad
Fridge: Tomatoes, lettuce
Pantry: Ingredients for homemade bread, bananas for fruit salad
Saturday: Spaghetti, garlic bread & green beans
Freezer: Zaycon beef
Pantry: Canned green beans, Prego, bread and pasta
Sunday: Grilled chicken, sweet potato fries and roasted broccoli
Freezer: Zaycon chicken
Pantry: Sweet potatoes, broccoli, Grill Mate Marinade packet (I toss Panko, Parm. cheese and olive oil w/ the broccoli and bake w/ fries).
Monday: Chicken Pot Pie (using leftover chicken)
Freezer: Frozen pie shell
Pantry: All produce, gravy, spices
Tuesday: Salmon Cakes and green salad
Freezer: Salmon cake freezer meal
Fridge: Produce for salad
Pantry: Canned salmon, Ritz crackers

How well does the Zaycon bacon freeze? That’s alot of bacon to buy…
We freeze the entire box just as it comes. Then we break off what we need & let it thaw or even cook directly from frozen. Tastes DELICIOUS even after a few months!
