Oh, Taco Soup. It’s always easy and always good. Like many soups, it is very flexible too. You can use the stuff that you already have in your pantry. Substitute different beans, if desired. Use ground turkey instead. Sometimes I add a small can a green chilies too. If you want to fatten it up a bit, serve it with shredded cheese and sour cream. The possibilities are endless!

Taco Soup

  • 1 can garbonzo beans
  • 1 can kidney beans or pinto beans
  • ½ lb ground beef (I often use 1 lb)
  • Onion, chopped
  • Taco seasoning, to taste
  • 1 can diced tomato
  • 1 can blended diced tomato
  • 1 can corn (optional)

Brown the ground beef. Mix everything together in a pot and heat it up. You don’t even have to drain any of the cans or the meat.
