
This potato dish goes by several names: funeral potatoes, cheesy potatoes, special potatoes, etc. Do you know of more names? There are also a lot of different versions of this recipe. Anyway, anytime we have ham, I feel like we have to have Special Potatoes too! We like to have ham for either Christmas Eve or Christmas dinner. Unfortunately, Special Potatoes are not the most healthy potato dish.
But it’s okay because you only have once a year, right? Here’s the way that I like to make Special Potatoes – easy & delicious (from my family cookbook).
Special Potatoes
- 3 lbs frozen, cubed potatoes
- 3 c cheddar cheese, shredded
- 2 cans cream of mushroom soup (or cream of chicken)
- 1 onion, chopped
- 1/2 c butter, melted
- 2 c sour cream
- salt and pepper
- 1 1/2 corn flakes, crushed (I often don’t have corn flakes, so I usually crush Corn Chex)
- 1/2 c butter, melted (Reduce this to 1/4 c, if so desired)
Preheat oven to 350. In a very large bowl, mix all but 1/2 the amount of cheese, the corn flakes, and last cube of butter. Pour into a 9×13 pan and sprinkle top with remaining cheese, the corn flakes, and butter. Bake for 50-60 minutes. (If you use frozen shredded hash browns, you can decrease the cook time to about 30 minutes.)

I call them Holiday potatoes and save them for the big 3 holiday dinners. Easter, Thanksgiving n Christmas. Paula Dean has a great potato casserole recipe at http://www.food network.com search for Mashed Bake. It has dried garlic mashed potatoes in it to use up some of your Betty crocker dried mashed potatoes.
My mother calls them “Better than Sex” Potatoes…you be the judge!

I use Panko bread crumbs on top ( especially after the 3.00 Q), also use cream of chicken vs. cream of mushroom,

We like them better using tater tots. My mom calls these “Sinful Potatoes” We’re having these for Christmas with our Maple Baked Pork Loin! Yummm!
