Cheddar Soup

Every Christmas Eve my family gets together and we have Clam Chowder and Cheddar Soup and we serve them in bread bowls from Albertsons.  There are 42 of us in all and rather than eating buffet style, several tables are set.  We spend the evening singing songs, reading about the birth of the Savior, and watch a slide show my dad put together forever ago… pictures depicting the Saviors life  to the Mo Tab singing “Baby What You Goin To Be”.   It’s one of my favorite nights of the year.

Cheddar Soup

approx 5-6 servings

2 Tbsp. minced onion
¼ c. butter
¼ c. + 1 Tbsp. flour
2 c. milk
2 c. chicken broth
½ lb. grated sharp cheddar cheese
½ c. minced cooked carrots
¾ c. minced cooked celery

Sauté onion in butter in pot on stove.  Add flour and blend; add milk and broth.  Cook until thickens, stirring, Add cheese and stir until melted.  Add vegetables and heat and serve.  Delish!!
