How’s your supply of free yogurt doing?  Are you looking for an easy way to use up a container or two before it expires?

FAB reader Yvonne left us her scone/biscuit recipe in the comment section last week so I thought I’d try it out this weekend. Yvonne’s scone recipe was so good in fact… my Husband even asked for seconds. :)

Basically all you do is mix up your dough (I used my KitchenAid Mixer) and divide it into 4 portions… Bake and let cool.

Simply cut a scone/biscuit in half…add a few strawberries, and little fresh whipping cream and you’re good to go.

I plan on baking a few more batches with my extra vanilla flavored Dannon Light and Fit yogurt and freezing them to use later in the summer!  Thanks Yvonne. :)

Yogurt Scones/Biscuits

1 Cup plus 2 Tbs flour
1 1/2 tsp Baking Powder
1/2 tsp Salt (opt)
1/4 tsp Baking Soda
2 Tbs Butter or margarine
1/2 cup plain yogurt (I prefer using a flavored yogurt, Strawberry is our favorite so far).
1/2 tsp Milk (for brushing on top

Add to yogurt – 1 tsp Sugar and 1 tsp Vanilla – I usually leave these out and it still tastes great.

Combine dry ingredients, cut in butter. Add yogurt, stir until just moistened, place on greased cookie sheet or in scone pan. Cut but do not separate biscuits. Brush tops with milk. Bake at 450 for 12-15 minutes.
