INGREDIENTS:
8 oz spaghetti or linguine pasta
1 Cup shredded carrots
1 Tbs sesame seeds
¼ Cup peanut butter
2 Tbs mayonnaise
2 Tbs soy sauce (you probably got a deal on Kikkomon)
2 Tbs canola oil
2 Tbs hot water
1 Tbs rice vinegar (can substitute with white vinegar)
1 Tbs toasted sesame oil
2 tsp honey
½ tsp ginger
1 clove of garlic
PREPARATION:
Cook noodles according to box instructions. Drain and rinse in cold water. In a large bowl toss noodles, carrots, and sesame seeds and set aside. Mix peanut butter, mayo, soy sauce, canola oil, hot water, vinegar, seaseme oil, honey, ginger and garlic in blender or food processor until smooth. Toss into noodles. Serve.
