Baked Potato Casserole
1 FAMILY
1 pkg frozen diced potatoes
6 slices of bacon cooked and crumbled
2 cups shredded cheddar
1 cup sour cream
2 bunches of green onion, chopped (sautéed in bacon)
Salt and pepper to taste
6 FAMILIES
6 pkgs frozen diced potatoes
36 slices of bacon cooked and crumbled
12 cups shredded cheddar
6 cups sour cream
12 bunches of green onion
Salt and pepper to taste
TO PREPARE FOR FREEZING
Fry bacon and sauté sliced onions. Let cool. Mix all ingredients. Place in bag.
TO PREPARE AFTER FREEZING
Thaw. Place in baking dish and bake for 30 min at 325. I think you could cook this from frozen if you could get it out of the bag, I would double the cook time.
Serves 6-8.

Hi! I do freezer meals, but certainly not to the efficiency that your group technique does. I’m going to have to look into that for sure!
I have a TIP for you concerning cooking from frozen, which is heaven in my opinion. I load my freezer bag with the food and make sure it is all in the bottom, then I lay that bag in a casserole dish to freeze. Once frozen I remove it from the dish and stack to freeze. All I have to do is cut the bag off the meal with scissors and pop it in the dish!
I have looked for information about cooking slow and low in the oven, but haven’t figured out the perfect formula yet. It would be ideal to be able to put the dish of frozen food in the oven before leaving home and come in that night to a perfectly cooked meal. The slow cooker is the only way I have found to do that. Some things are just better from the oven though.

How “much” potato?? If I’m using my own; left-over baked or fried? Or, what size bag? Thanks!
I was wondering the same thing with the potatoes. Also, could this work with turkey bacon?
