Fabulous Freezer Cooking: Honey Mustard BBQ Chicken

HONEY MUSTARD BBQ CHICKEN

FOR ONE FAMILY
1/4 cup apple cider vinegar
1/4 cup brown sugar
1 cup chicken stock
1/2 cup honey mustard
1/2 tsp allspice
1/2 tsp curry powder
4 pieces chicken breasts
4 chicken thighs
salt and pepper

FOR SIX FAMILIES
1.5 cups apple cider vinegar
1.5 cups brown sugar
6 cups chicken stock
3 cups honey mustard
3 tsps allspice
3 tsps curry powder
24 pieces chicken breasts
24 chicken thighs
salt and pepper

PREPARE FOR FREEZING: Mix vinegar, brown sugar, stock, honey mustard, allspice, and curry powder. Place in bag for freezing. Bag chicken for freezing.

PREPARE AFTER FREEZING: Thaw. Preheat grill pan or griddle over medium-high heat.  Bring sauce to a bubble and reduce heat to lowest setting. Coat chicken with a drizzle of oil and salt and pepper, to taste. Place chicken on hot grill and cook 4 to 5 minutes, then turn. Baste chicken liberally with sauce and grill another 5 minutes. Turn once again and baste. Cook 2-3 minutes more, then transfer chicken to a platter and serve.

  1. This recipe sounds yummy, but I’m confused as to why the amount of honey mustard and spices does not increase when the recipe is multiplied for 6 families?? And -how much total of the prepared sauce would be measured out for each family?

    • It would have to be increased as well…. I’m confused about the vegetable oil in the small sauce pan when the cooking begins–I’m guessing it really means to heat up the sauce mixture, but would love to know for sure that there isn’t a missing ingredient.

      • I think the vegetable oil is for if you are cooking on the stove and this recipe is for the BBQ. I updated it accordingly. Thank you for pointing that out.
