
TACO SALAD RICE
1 FAMILY
1 lb ground beef
1 garlic clove, minced (or ½ Tbsp minced garlic)
3 c. cooked yellow rice
1 tsp cumin
1 tsp chili powder dressing:
¼ tsp salt 2/3 c. sour cream
¼ tsp pepper 2/3 c. picante
6 c. torn Romain lettuce 1 tsp chili powder
3 c. chopped tomato ½ tsp cumin
1 c. frozen corn
½ c. red onion, chopped
1 (15 oz) can black beans
½ c. cheese, shredded (cheddar, or Colby jack is good)

36 c. torn Romaine lettuce 6 tsp chili powder
18 c. chopped tomato 3 tsp cumin
6 c. frozen corn
3 c. red onion, chopped
6 (15 oz) cans black beans
3 c. cheese, shredded
TO PREPARE FOR FREEZING
Brown beef with garlic. Once beef is cooked, add in cumin, chili powder, salt, and pepper. Place in lg freezer bag. Make dressing and place in small bag and place in lg bag with meat. Place cheese in separate small bag and add in with meat bag.
TO PREPARE
On Hand: lettuce and tomato. Allow beef and dressing to thaw. Cook rice and then add in with beef in skillet, cooking on med until thoroughly heated. Cook corn and cool slightly. In bowl combine lettuce, tomato, corn, black beans, and cheese. Once mixed toss lettuce with dressing. To serve put lettuce on bottom and top with meat mixture.

This meal serves 4-6. You can certainly make enough meals to last all month. When our group meets we make about 15 meals and they last almost 2 months b/c we do not eat them every night.
This looks really yummy! My husband keeps asking me to make taco salad, but I’ve been hesitant because we’re trying to eat healthier. The kind he wants is similar to what restaurants make with the fried shell and greasy beans and meat. All the ingredients listed in this taco salad are things he would readily eat and enjoy. Thanks!
