FUNERAL POTATOES
1 FAMILY
6 c. frozen grated potatoes
½ c. margarine
2 cans cream of chicken soup
1 ½ c grated cheddar cheese
¼ c very finely chopped onion
2 c sour cream
¾ c corn flakes
¼ c melted butter
6 FAMILIES
36 c frozen grated potatoes
3 c margarine (6 sticks)
12 cans (64.5 oz) cream of chicken soup
9 c. grated cheddar cheese
1 ½ c very finely chopped onion
12 c (6lbs) sour cream
4 ½ c corn flakes or Ritz crakers crushed
1 ½ c melted butter
TO FREEZE
Divide into 12 Ziploc Bags for 6 families and 2 for 1 family
Each Ziploc Bag Contains:
3 c. frozen grated potatoes
1/4 c. margarine
1 can cream of chicken soup
3/4 c grated cheddar cheese
1/8 c very finely chopped onion
1 c sour cream
It works really fast and easy to mix the item in a bag individually rather than using a few large bowls and having to disperse the mixture evenly.
Place cornflakes/ ritz crackers in a separate bag to place in pantry.
TO PREPARE AFTER FREEZING
Thaw and place ingredients in casserole dish. Mix cornflakes/crakers and melted butter, sprinkle over top. If still frozen, bake at 400 for 1 ½ hours, uncovering the last 15 min. If thawed, bake @ 350 for 45 min, uncovering last 15 min.
Sometimes I will add ham or sausage to this dish if I want to serve it as a main dish rather than a side dish.






























Perfect timing for this recipe! I’m having our second baby in three days and these are a perfect addition to all the main course meals I already have in the freezer. Plus, I have a boatload of free sour cream from Albertsons.

Does this make 2 separate meals or do you use both the bags at once?
One bag fits great in a 2 qt 8×8 as pictured. You could combine the two bags in a 13×9 for a bigger crowd.
I totally love freezer funeral potatoes! It’s so much easier to make a huge batch and just pull out a pan to top with buttery crispy goodness. Sadly I only have one small pan left in my freezer…
Do you cook the potatoes before you freeze them? I’m guessing you do.
scratch the last question. I see about you use frozen, but is there a way to grate your own instead of buying the frozen potatoes?
If you grate your own I would cook them first to avoid them turning brown.
